Franquette Créperie and Lucette Bistro are two of Bowral's leading French-inspired dining destinations. Franquette brings the energy of a French crêperie to the Southern Highlands, while Lucette offers polished French bistro dining, inspired by Paris but unmistakably local. Built on classic French technique, seasonal highlands produce and genuine European hospitality, together we're creating some of the region's most loved dining experiences.

We're seeking an experienced Beverage Manager to lead the coffee, wine and beverage program across both venues. This is a hands‑on, cross‑venue role for someone who pairs strong beverage knowledge with commercial rigour, someone who takes pride in sourcing, quality and consistency, and who enjoys training front‑of‑house teams to deliver a genuinely memorable beverage experience.

About the Role

As Beverage Manager, you will take ownership of the beverage category — coffee, wine and other alcoholic and non‑alcoholic beverages — across both Franquette and Lucette. You'll manage ordering and supplier relationships, drive quality and consistency, develop and refresh our beverage offering, and deliver beverage training to front‑of‑house teams at both venues. You'll work closely with the Owners, Operations Manager, Executive Chefs and the Restaurant Manager at each venue — while day‑to‑day people management of front‑of‑house staff remains with the Restaurant Manager at each site.

Key Responsibilities

• Manage ordering and inventory of coffee, alcoholic and non‑alcoholic beverages across both venues
• Set and maintain quality standards for coffee, wine, beer, spirits, cocktails and non‑alcoholic beverages
• Develop and refresh beverage lists and menus in collaboration with the Owners, Operations Manager and Executive Chefs
• Source, evaluate and manage relationships with beverage suppliers, negotiating pricing and terms across both venues
• Monitor beverage costs, margins and stock variance, and report against budget
• Design and deliver beverage training for front‑of‑house teams, covering barista skills, wine knowledge, cocktail preparation and service standards
• Ensure compliance with liquor licensing, Responsible Service of Alcohol (RSA) and food safety standards across both venues
• Manage beverage‑related setup and pricing within the POS system (Square)
• Coordinate maintenance and servicing of beverage equipment (coffee machines, wine and beer systems)

About You

• Proven experience in a beverage management, food and beverage management, or senior bar/wine role within a premium hospitality environment
• Strong knowledge across coffee, wine and other beverage categories
• Current Responsible Service of Alcohol (RSA) certificate required; barista training/certification highly regarded
• Confident supplier negotiator with strong commercial acumen
• A natural mentor who enjoys training and upskilling teams
• Highly organised, with strong attention to detail and a passion for quality
• Available to work flexibly across both venues as required
