The Royal Melbourne Hotel is hiring for a full-time hospitality role. You will join a dynamic team, delivering top-tier service across bar and dining settings, including corporate lunches, music events, and live broadcasts.

You will manage fast-paced shifts, engage guests with cocktails, wine and beer, and collaborate with kitchen staff to ensure smooth service while upholding RSA and safety standards.

Qualifications

  • 3 years+ experience in a fast-paced hospitality role.
  • Demonstrated speed, efficiency and clear communication.
  • Up-to-date Victorian RSA certificate and knowledge of liquor laws.

  • Work efficient shifts in a high-volume environment while delivering engaging, friendly service.
  • Work across cocktails, wine, beer and the broader bar operation.
  • Keep the bar organised, clean and moving during busy service.
  • Work with kitchen teams to keep service running smoothly.
  • Support the supervisors and managers in venue set-ups and closes.
  • Maintain deep product knowledge across our wine, beers and selection of spirits; ensure drink prep and stock rotation.
  • Enforce liquor licensing laws and safety of guests and crew.
  • Be available to work weekends, late nights and public holidays.

About the Role

We are offering a full-time position to a customer-driven candidate who can adapt to each environment while maintaining the same level of professionalism, service, and attention to detail. Your role will be varied, from waiting tables during a corporate lunch to high-volume bar service at our music events.

In this role you will:

  • Work efficient shifts in a high-volume environment while delivering engaging, friendly service.
  • Work across cocktails, wine, beer and the broader bar operation.
  • Keep the bar organised, clean and moving during busy service.
  • Work with kitchen teams to keep service running smoothly.
  • Support the supervisors and managers in venue set-ups and closes.
  • Maintain deep product knowledge across our wine, beers and selection of spirits. Ensure efficient drink prep, stock rotation, and bar set-ups/pack-downs.
  • Enforce Victorian liquor licensing laws, maintain strict Responsible Service of Alcohol (RSA), and prioritise the safety and wellbeing of our guests and crew.
  • Be available to work weekends, late nights and public holidays.
About you

To be the perfect addition to Royal Melbourne Hotel, you will have 3 years' prior experience in a comparable role within a fast-paced hospitality business and demonstrated strong speed and efficiency and clear communication skills.

You'll also:

  • Have experience in a fast-paced, high-volume bar or hospitality venue.
  • Be a passionate hospitality professional with a strong knowledge of food, drinks and cocktails.
  • Be energetic, calm under pressure, accountable, and eager to step up and multi-skill across all areas of the venue.
  • Have an up-to-date Victorian RSA certificate and a thorough understanding of local liquor laws.
  • Be experienced with POS systems, cash handling, and basic inventory control.
  • Be Respectful, inclusive, and safety-focused, treating team members and guests with genuine warmth.
