Job summary

Dear Nonna is opening a new Italian restaurant and bar in NSW and seeks bartenders who are confident with both coffee and cocktails. The role supports an opening team, requires at least 2 years of bartending in a busy venue, and values expertise in espresso, latte art, and classic cocktails.

You will craft signature drinks, maintain bar standards, and deliver friendly guest service while working during peak times. NSW RSA compliance is required.

Qualifications

• At least 2 years' bartender experience in a busy venue.
• Barista skills with espresso and latte art.
• Strong knowledge of classic cocktails and ability to create signature cocktails.
• Good knowledge of spirits and wine; maintain bar prep and stock.

Responsibilities

• Work as bartender and barista on opening team.
• Serve both coffee and cocktails, especially during peak service.
• Develop and showcase signature cocktails.
• Keep the bar clean, stocked and ready; manage prep and stock.
• Provide friendly, confident service to guests.

DEAR NONNA IS LOOKING FOR BARTENDERS!

Dear Nonna | Gregory Hills | Opening February 2027

Dear Nonna is a new Italian restaurant and bar, mixing tradition with a modern style. Fresh pasta made every day, wood-fired pizza and a drinks list inspired by Italy, from the morning espresso to the evening Negroni.

We're building our bar team from scratch and we're looking for experienced bartenders who are just as confident on the coffee machine as they are on the cocktail station. If you can do both well, we want you on the opening team.

BARTENDER / BARISTA

• At least 2 years' experience as a bartender in a busy venue
• Solid barista skills: great espresso, properly textured milk, consistent latte art
• Strong knowledge of classic cocktails
• Creative, with the ability to develop signature cocktails
• Fast and organised during peak service, on both coffee and drinks
• Excellent knowledge of spirits and wine
• Keeps the bar clean, stocked and ready, with good habits on prep and stock
• Friendly and confident with guests
• Current NSW RSA
