Job summary

Join the team at Pullman Sydney Olympic Park under Accor’s Bacar premium dining concept. Lead as Assistant Restaurant & Bar Manager to drive service excellence, guest satisfaction and team performance during daily operations and major events.

You will oversee breakfast to late-night service, engage VIP guests, upsell beverages and mentor colleagues to uphold Heartist values and LQA standards in a high-energy, multi-brand precinct.

Qualifications

• Minimum 2 years leadership experience in a hotel restaurant or similar environment.
• Current RSA certification.
• Strong communication skills and ability to remain professional under pressure.
• Highly organised with attention to detail and consistency.
• Solid understanding of POS, rosters, wage controls and reporting.

Responsibilities

• Lead service operations across breakfast, lunch and peak event periods to ensure seamless execution.
• Elevate guest experience and online review scores through proactive engagement and service recovery.
• Engage VIPs and Accor members with personalised recognition and loyalty experiences.
• Grow revenue per seat through upselling and beverage storytelling.
• Inspire and mentor the team to maintain a high-performance culture aligned with Heartist values.
• Roster, forecast and manage labour to match occupancy and event demand.
• Collaborate with Culinary Team to maintain smooth service flow and product knowledge.
• Monitor financial performance, including average checks, COGS and labour percentage; assist with monthly reporting.
• Ensure hygiene, RSA compliance, stock control and equipment care.

Bacar is a premium dining destination within Pullman at Sydney Olympic Park, known for sophisticated service, thoughtful cuisine and a strong beverage identity. As our Assistant Restaurant & Bar Manager, you’ll be the on floor leader who drives service excellence, guest satisfaction and team performance across daily operations and major event days.

What You’ll Be Doing

• Lead service operations across breakfast, lunch and peak event periods, ensuring seamless execution even under pressure
• Elevate guest experience by lifting RPS, Google and TripAdvisor scores through proactive engagement and service recovery.
• Engage VIPs and Accor members with personalised recognition and loyalty‑driven experiences.
• Grow revenue per seat through structured upselling, beverage storytelling and strategic recommendations.
• Inspire and mentor your team, fostering a high‑performance culture aligned with LQA standards and Heartist values.
• Roster, forecast and manage labour, ensuring staffing is aligned with hotel occupancy and event demand
• Collaborate strongly with the Culinary Team to maintain smooth service flow and strong product knowledge
• Monitor financial performance, including average checks, revenue, COGS awareness and labour percentage. Assist with monthly reporting.
• Champion compliance and standards across hygiene, RSA, stock control and equipment care

Qualifications

• Minimum 2 years leadership experience working in a hotel restaurant or similar environment
• Current RSA
• Confident hands on leader with strong communication skills and can maintain professionalism under pressure
• Highly organised and has a strong attention to detail and commitment to consistency
• Sound understanding of POS systems and is capable with rosters, wage control and reporting
• High presentation standards
• Strong understanding of food safety and solid knowledge of food and beverage with a guest focused mindset
• Comfortable with the physical aspects of the job such as prolonged standing and walking, carrying, lifting, pushing and pulling
• Flexibility to work a variety of shifts such as early mornings, late nights, weekends, public holidays and major event days
• Have full working rights in Australia
