Job summary

1 Hotel Melbourne is seeking an Assistant Bar Manager to join the Crane Bar team and support the delivery of exceptional bar experiences across our venue. You will work with the Bar Manager and Director of Food & Beverage to bring our beverage philosophy to life through thoughtful service, elevated cocktail culture, and a focus on local ingredients.

You will lead day-to-day operations, coach the team, help develop and execute cocktail concepts, and ensure every guest experience is memorable.

Qualifications

• Minimum 4 years’ experience in a bar, beverage, or luxury hospitality environment.
• Proven cocktail expertise, with the ability to create, cost, and implement beverage concepts.
• Genuine passion for hospitality, service, and guest connection.
• Ability to perform in a high-paced environment with strong time management.
• Hands-on, accountable approach to operations and team leadership.
• Confidence interpreting financial statements and reporting.
• Flexibility to work across a dynamic seven-day operation.
• Natural alignment with the values, culture, and vision of 1 Hotels.

We are seeking an Assistant Bar Manager to join our Crane Bar team and support the delivery of exceptional bar experiences across our venue.

Working alongside the Bar Manager and in partnership with the Director of Food & Beverage, you will help bring our beverage philosophy to life through thoughtful service, elevated cocktail culture, and a strong appreciation for local products. From daily operations to team leadership, you will play a key role in ensuring our bar remains vibrant, fun, and a memorable destination in their own right.

Rooted in sustainability and inspired by seasonality, our approach celebrates local ingredients, conscious choices, and the art of genuine hospitality.

About the role

You will support the leadership of day-to-day bar operations while being comfortable engaging with our guests with genuine care and focus. You will contribute to the development and execution of our cocktail program and bar activations. Coach and inspire the team on the floor and ensure each guest experience is seamless and thoughtfully curated.
