Job summary

1 Hotel Melbourne in Docklands is seeking a Restaurant Manager to lead From Here By Mike Hatted Restaurant, delivering memorable guest experiences and building a high‑performing team.

Reporting to the Director of Food & Beverage, you’ll own daily restaurant operations, from service standards and team development to sales, costs and financial performance. You’ll ensure top service and brand integrity across a seven‑day operation.

Qualifications

• Four years’ management experience in a luxury hotel or comparable hospitality environment.
• Strong budgeting and P&L understanding with labour and cost control.
• Genuine passion for hospitality with hands‑on leadership.

Responsibilities

• Lead the restaurant team across a seven‑day operation with warm, attentive service.
• Coach, develop and support team members including the Assistant Restaurant Manager.
• Plan staffing and oversee onboarding and training for team success.
• Respond to guest feedback and resolve concerns with care and ownership.
• Manage labour, food and beverage costs while identifying opportunities to grow sales.
• Review results (covers, spend, guest feedback) and turn insights into improvements.
• Collaborate with Culinary, Marketing and other hotel teams to bring the restaurant experience to life.
• Uphold brand standards and foster a workplace where people do their best work.

Reporting to the Director of Food & Beverage, you’ll take ownership of daily restaurant operations, from service standards and team development to sales, costs and financial performance.

What you’ll do

• Lead the restaurant team across a seven-day operation, maintaining warm, attentive service during every meal period.
• Coach, develop and support team members, including the Assistant Restaurant Manager.
• Plan staffing and oversee onboarding and training so the team is set up to succeed.
• Respond to guest feedback and resolve concerns with care and ownership.
• Manage labour, food and beverage costs while identifying opportunities to grow sales.
• Review results, including covers, average spend and guest feedback, and turn insights into practical improvements.
• Work closely with Culinary, Marketing and other hotel teams to bring the restaurant experience to life.
• Uphold 1 Hotels’ brand standards and create a workplace where people can do their best work.

What you’ll bring

• At least four years’ management experience in a luxury hotel or comparable hospitality environment.
• Strong restaurant operations experience and a sound understanding of budgets, P&L, labour and cost control.
• A genuine passion for hospitality, with a hands-on approach to leading service.
• Clear communication, sound judgement and the ability to stay calm under pressure.
• Availability to work across a seven-day roster.
