Job summary

Pullman & Mercure Melbourne Albert Park, part of Accor, invites applications for a commercial cookery apprenticeship. You will learn across kitchen sections, preparing ingredients, maintaining hygiene, and supporting the team in service to deliver high-quality dishes.

You must be enrolled in or willing to undertake a Certificate III in Commercial Cookery. Australian working rights are required; sponsorship is not provided.

• Strong work ethic with a positive attitude and ability to follow instructions.

Responsibilities

• Assist with preparation and cooking of high-quality food following recipes and safety standards.
• Learn and develop practical cookery skills under guidance of experienced chefs across kitchen sections.
• Prepare ingredients including washing, peeling, chopping and portioning to ensure quality.
• Maintain a clean, hygienic kitchen following HACCP and safety requirements.
• Assist with receiving, storing and rotating stock to minimise waste and ensure freshness.
• Support kitchen during service and ensure food is prepared and presented to a high standard.
• Operate kitchen equipment safely and follow workplace procedures.

Job Description

Key Duties:

• Assist with the preparation and cooking of high-quality food in accordance with recipes, menu specifications and food safety standards.
• Learn and develop practical cookery skills under the guidance of experienced chefs across a variety of kitchen sections.
• Prepare ingredients, including washing, peeling, chopping and portioning, ensuring consistency and quality.
• Maintain a clean, organised and hygienic kitchen, adhering to all food safety, HACCP and workplace health and safety requirements.
• Assist with receiving, storing and rotating stock to minimise waste and maintain product freshness.
• Support the kitchen team during service by ensuring food is prepared and presented efficiently and to a high standard.
• Operate kitchen equipment safely and responsibly while following all workplace procedures and instructions.
• Demonstrate a positive attitude, willingness to learn and commitment to completing a recognised commercial cookery apprenticeship while contributing to a collaborative team environment.

Qualifications

Skills & Experience:

• A genuine passion for food, cooking and developing a career in the hospitality industry.
• Enrolled in, or willing to undertake, a Certificate III in Commercial Cookery (or equivalent apprenticeship qualification).
• Strong work ethic with a positive attitude, eagerness to learn, and the ability to follow instructions and accept feedback.
• Excellent communication and teamwork skills, with the ability to work in a fast-paced environment while maintaining high standards of hygiene and food safety.
