Job summary

Reporting to the Residential Manager and working with the Hospitality Services Manager, you will lead kitchen staff, manage stock and budgets, ensure HACCP and infection control, and uphold Aged Care Quality Standards while engaging with

Qualifications

• Qualified chef with experience in commercial kitchens and aged care catering.
• Certificate III in Commercial Cookery and Food Safety Supervisor Certificate.
• Experience managing bulk orders and stock control.
• Strong knowledge of food safety, hygiene and infection control.
• Understanding of dietary requirements for older people (IDDSI).

Responsibilities

• Prepare and cook meals in accordance with cyclic and seasonal menus.
• Ensure safe food handling, HACCP and infection control standards.
• Maintain a clean, safe and hygienic kitchen environment.
• Monitor portions, minimise food wastage and manage stock effectively.
• Order and control stock within food cost guidelines.
• Supervise and direct kitchen staff in line with DINE standards.
• Participate in customer meetings and incorporate feedback into menu planning.
• Ensure compliance with Aged Care Quality Standards and relevant legislation.
