Overview

DAP & CO. HOSPITALITY GROUP was created in 2011 when the collaboration between Andrew Baturo, Denis Sheahan and Paul Piticco opened Popolo in the River Quay precinct in Brisbane’s iconic Southbank. On the back of its success, in 2013 the trio opened the award-winning The Gresham Bar in Brisbane’s CBD. In late 2017, they secured the tenancy of the ground floor of Old Mineral House, where they restored the interior to match the imposingly beautiful exterior and brought New York charm to Downtown Brisbane as Walter’s Steakhouse and Wine Bar.

DAP and Co. Hospitality Groups latest project, Naldham House (incorporating the Brasserie & Terrace, Club Felix and The Fifty Six) is now open, and has revitalized the heritage and garden precinct of Brisbane’s CBD.

We are now seeking a Head of Bars Manager to report to the General Manager

Responsibilities

• Writing cocktail lists for the outlets
• Recruitment - bartenders, bar supervisors and bar managers for the venues
• Training and development
• Costings of the cocktail list and beverage selection
• Working with the Group Sommelier and the Head Sommelier to curate the beverage list for the venues
• Curating beverage tastings with suppliers
• Supplier negotiation and maintaining strong supplier relationships
