Technical Director / Head of Process & Product Technology

Position : Technical Director / Head of Process & Product Technology, AL MIRAYA Distillery

About AL MIRAYA

AL MIRAYA is a first factory in RAK FTZ producing premium spirits — vodka, whiskey, and more. Our project combines the highest international quality standards, cutting-edge technologies, and the UAE’s favorable free-zone regulations.

Key Responsibilities

Strategic & Project Planning

• Define and develop the end-to-end technological concept of the distillery, from raw-material intake to finished goods.
• Coordinate the master site plan with RAKEZ, and calculate utility requirements (steam, water, compressed air).
• Establish and manage CAPEX / OPEX budgets; monitor timelines using a Gantt chart.
• Draft detailed TOR (Terms of Reference) and conduct international tenders via the RAKEZ e-Tender Portal.
• Evaluate and qualify equipment suppliers against ISO, API, EHEDG, and UL standards.
• Oversee mechanical and electrical installation of piping, vessels, and automation systems.
• Organize Factory Acceptance Tests (FAT) and Site Acceptance Tests (SAT); configure CIP / SIP systems and SCADA.

Process Technology & Quality Assurance

• Write and roll out SOPs (in English and Arabic); implement HACCP in line with GSO and ISO 22000.
• Establish and manage the QC laboratory (per MOHAP requirements) and oversee the MES for full traceability.
• Lead R&D for new recipes : date-extract infusion, maceration, filtration & extraction processes.
• Develop and patent new formulations, oversee pilot batches, and collaborate with marketing to launch new SKUs.
• Design and deploy PLC / SCADA / HMI solutions.
• Integrate MES / ERP platforms (SAP or Odoo).

Team & Contractor Management

• Recruit, train, and mentor process engineers, operators, and QA / QC staff.
• Coordinate all third-party contractors and service providers.

Regulatory Compliance & Certification

• Manage import / export logistics and maintain accurate records of excise duties and VAT.
• Secure all necessary licenses and certifications (MOHAP, ESMA G-Mark) for alcohol production in the UAE.

Budget Control & Reporting

• Monitor actual versus budgeted spend; deliver monthly status and financial reports to senior management.
• Drive innovation initiatives and work with Marketing on line extensions.
• Plan and prepare for Phase II plant expansion.

Candidate Requirements

• Bachelor’s or Master’s in Food Technology, Chemical Engineering, or related field.
• Minimum 7 years’ experience as a Head of Technology or Technical Director at a beverage or spirits production facility.
• Proven track record in turnkey plant design and commissioning.
• Deep expertise in distillation, maceration, filtration & extraction technologies.
• Experience managing international tenders and equipment procurement (ISO / API / EHEDG).
• Hands-on with PLC / SCADA / HMI and MES / ERP implementations.
• Strong knowledge of HACCP, GSO standards, MOHAP and ESMA regulations.
• Fluent English; additional languages (Arabic) are a plus.
• Excellent leadership, cross-functional team management, and negotiation skills.
• Willingness to relocate to Ras Al Khaimah, UAE.
