Job Description
PRIMARY RESPONSIBILITIES:
- Washes dirty wares using dishwashing machine according to prescribed procedures.
- Removes cleaned wares from the dishwashing machine, sorts them by kind, size, design, and outlet; scrapes food residue or soaks stained ware with solution when necessary.
- Washes and cleans all used pots, pans, and other kitchen utensils.
- Polishes silverware for all functions and outlets.
- Prepares and delivers clean wares, removing stains and deposits, and separates damaged items.
- Collects empty bottles from kitchen and outlets, sorts them in the bottle room, and places them in proper containers; stocks containers properly.
- Maintains sanitation and hygiene in wet and dry garbage storage areas.
- Maintains cleanliness of service equipment such as cooling ranges, griddles, ovens, hoods, pots, pans, floors, walls, reach-in and walk-in chillers, and other kitchen utensils.
- Delivers empty trash bins to kitchen areas and outlets; collects filled trash bins and empties them in the garbage room.
- Prepares equipment for outside catering and related functions.
- Ensures proper monitoring and recording of dishwashing machine temperatures in the Temperature Control Sheet.
- Uses cleaning detergents and chemicals appropriately, following dilution guidelines according to MSDS to prevent wastage.
- Operates dishwashing, glass washing, decarbonizing, scrubbing machines, wet vacuum, and other stewarding equipment for hygiene and cleaning purposes.
- Cleans and maintains orderliness in assigned areas and with work equipment such as the kitchen, food prep areas, garbage and bottle rooms, dishwashers, sorting tables, sinks, trash cans, and other equipment.
- Ensures guest satisfaction and promotes hotel image by providing high-quality cleaning and sanitation of all equipment and tableware in restaurants, bars, and guest areas related to Food & Beverage.
- Maintains grooming standards as per Dusit policy.
- Reports to superiors on time and communicates important information from previous shifts.
- Participates in training and meetings organized by hotel management to improve skills and knowledge.
- Performs other duties as assigned by supervisor.

Job Requirements
- Minimum 1 year of relevant experience, with exposure to kitchen operations.
- Good knowledge of cleaning equipment.
- Ability to communicate basic English.
- Physically strong.
