Job Description
PRIMARY RESPONSIBILITIES:
- Washes dirty wares using the dishwashing machine according to prescribed procedures.
- Removes cleaned wares from the dishwashing machine, sorts them by kind, size, design, and outlet; scraps food residue from ware or soaks stained ware with solution when necessary.
- Washes and cleans all used pots, pans, and other kitchen utensils.
- Polishes silverware, including those for all functions and outlets.
- Prepares and delivers clean wares: removes stains and deposits, and separates damaged items.
- Collects empty bottles from kitchen and outlets, sorts them in the bottle room, and places them in proper containers; stocks containers properly.
- Maintains sanitation and hygiene in both wet and dry garbage storage areas.
- Maintains cleanliness of service equipment such as cooling ranges, griddles, ovens, hoods, pots, pans, floors, walls, reach-in and walk-in chillers, and other kitchen utensils.
- Delivers empty trash bins to kitchen areas and outlets; collects filled trash bins and empties them in the garbage room.
- Prepares equipment for outside catering and other related functions.
- Ensures proper temperature monitoring of dishwashing machines and records it in the Temperature Control Sheet.
- Uses cleaning detergents and chemicals appropriately, following dilution guidelines according to MSDS to prevent wastage.
- Operates dishwashing/glass washing machines, decarbonizes, scrubs using machines like Wet Vacuum, and other equipment used in stewarding for hygiene and cleaning purposes.
- Cleans and maintains orderliness in assigned areas and with work equipment such as the kitchen, food prep areas, garbage and bottle rooms, dishwashing machines, sorting tables, sinks, trash cans, and other equipment.
- Ensures guest satisfaction and promotes the hotel's image by maintaining high standards of cleanliness and sanitation of all equipment and tableware used in restaurants, bars, and other guest areas related to Food & Beverage.
- Maintains grooming standards as per Dusit grooming policy.
- Reports to work on time and passes important shift information to superiors.
- Participates in all training and meetings organized by hotel management to improve skills and knowledge.
- Performs other duties as assigned by supervisor.

Job Requirements
- Minimum of 1 year of relevant experience, with exposure to kitchen operations preferred.
- Good knowledge of cleaning equipment.
- Ability to communicate in basic English.
- Physically strong.
