Redford Recruiters seeks a skilled South Indian Cook for a luxury resort/hotel in Al Ain, UAE. The candidate must have strong practical knowledge of authentic South Indian cooking, including breakfast dishes, curries, gravies, chutneys, breads, and regional specialties.

The Cook will prepare consistently high-quality food while upholding hygiene, safety, portion control, and kitchen organisation, and will work with the team to deliver a superior dining experience in a luxury environment.

Qualifications

• Practical experience preparing South Indian cuisine.
• Strong knowledge of South Indian ingredients, spices, cooking techniques, and flavour profiles.
• Ability to prepare multiple dishes consistently and independently.
• Knowledge of kitchen hygiene, food safety, and proper food handling.

Responsibilities

• Prepare authentic South Indian dishes according to required recipes and quality standards.
• Prepare and manage breakfast, lunch, and dinner items as assigned.
• Prepare batters, chutneys, gravies, curries, rice dishes, breads, snacks, and accompaniments.
• Maintain consistency in taste, quality, portion size, and presentation.
• Complete food preparation and mise-en-place before service.
• Ensure ingredients are properly cleaned, prepared, stored, and labelled.
• Monitor ingredient quality and minimise food wastage.
• Maintain cleanliness and hygiene of the assigned kitchen and workstations.
• Follow food-safety and kitchen-hygiene procedures.
• Coordinate effectively with chefs and other kitchen team members.
• Support smooth kitchen operations during busy service periods.
• Follow instructions from the Head Chef / Kitchen Supervisor.
• Maintain professional conduct appropriate to a luxury resort/hotel environment.
