Emirates Palace Mandarin Oriental, Abu Dhabi is seeking a Sous Chef to join our Culinary team, specifically for the Lebanese Terrace Outlet. The Sous Chef reports to the Chef de Cuisine and is responsible for ensuring the smooth operation of the kitchen.
Job Responsibilities:
- Schedule working hours for kitchen staff based on business volume, including arranging extra staff during peak times.
- Train and supervise kitchen staff to ensure tasks are fulfilled efficiently.
- Attend meetings and training sessions as required.
- Assign specific duties to team members and oversee their work.
- Conduct monthly stock-taking in collaboration with the Cost Control Department.
- Maintain high standards of cleanliness and discipline among staff.
- Ensure the quality of all food prepared in the Lebanese Restaurant, checking taste, temperature, and presentation.
- Report staffing issues and staff-related matters to the Executive Chef and recommend promotions or transfers.
- Ensure all kitchen equipment is functioning properly and instruct staff on proper usage.
- Prevent the use of spoiled or contaminated products and ensure staff health and hygiene.
- Adhere to hotel policies and procedures.
- Maintain a friendly attitude and professional appearance at all times.
- Be familiar with hotel emergency procedures.
- Manage daily food inventory and internal transfers.
- Meet deadlines and manage time effectively.
- Identify and resolve operational problems professionally.
- Complete daily logs and document relevant operational information.
- Handle personnel actions, including leave requests, disciplinary actions, and recognitions.
Candidate Requirements:
- Minimum 3 years of experience as Junior Sous Chef or current Sous Chef in a high-end Lebanese restaurant or luxury hotel environment; resort experience is a plus.
- Postgraduate qualification or Hotel Management apprenticeship.
- Full knowledge of sanitation standards in food handling.
- High creativity and commitment to quality standards.
- Strong leadership, communication, and organizational skills.
