Job Description
To ensure that all outlet reports, schedules, standard recipes, menus, food presentation photographs and correspondence are completed in liaison with the Executive Chef and Executive Sous Chefs in an accurate and punctual manner.
- Develop menus and 'specials' that meet the needs of the target market and align with the restaurant's operating concept.
- Create menus and set standard recipes (according to SOPs) to maintain acceptable food costs while satisfying guest expectations.
- Understand and adhere to company policies regarding fire safety, hygiene, and safety standards.
- Maintain operating and kitchen equipment to a high standard, minimizing breakages.
- Ensure compliance with HACCP and Dubai Municipality audit requirements as needed.
- Inspect incoming produce to ensure all food merchandise matches order sheets, receiving records, and purchasing specifications.
- Maximize team productivity and morale, maintaining discipline in accordance with hotel guidelines and local legislation.
- Follow Anantara's food preparation and presentation standards to ensure consistent quality. Continuously seek improvements and enhancements to presentation guidelines.
- Maintain food safety and protection standards, including proper storage, dating, and rotation of food items.
- Take responsibility for the management of all outlet property and facilities assets.
