The Role We are currently recruiting a talented Sous Chef to join our dynamic culinary team. You will be working alongside one of Irish Head Chef where you will develop your career. This role demands creativity, precision, and leadership to ensure the consistent delivery of exceptional cuisine and smooth kitchen operations. A motivated and skilled Sous Chef to support the leadership of our culinary operations, ensuring exceptional food quality, consistency, and team performance. Key Responsibilities :
- To assist and contribute in the design and delivery of new menu concepts.
- To manage and oversee the smooth running of the day-to-day operation in the kitchen in conjunction with the Senior Chefs.
- To maintain consistently high standards and quality across all areas of the food operation.
- To be involved in the training and coaching of team members.
- Maintain purchasing, receiving and food storage policies and procedures.
- To understand the agreed targets on food cost, payroll and wastage as per departmental budgets.
- Managing rosters in accordance with budgets Requirements
- Minimum 2 years’ experience in a senior culinary role within a 4–5-star property.
- High-volume kitchen operations experience, including standalone businesses. British / Irish restaurants is a plus.
- Exposure to diverse environments such as concerts, horse racing events, and stadiums.
- Strong passion for cooking with fresh, seasonal, and high-quality ingredients.
- Creative approach to menu development and presentation.
- Proven leadership with the ability to earn team respect through mentorship and performance.
- A ‘can do’ attitude towards training, developing and motivating the culinary team.
- Confident decision-maker with a composed and balanced temperament.
- Skilled in adapting to new or high-pressure environments.
- Solid understanding of menu costing, kitchen financials, and waste control.
- Holds HACCP qualification and maintains strict food safety standards.
- Effective multitasker capable of thriving in fast-paced kitchens.
- Communicate effectively in English, both spoken and written.
