About The Job

Based at the Mandarin Oriental Downtown, Dubai within the Greek Restaurant, the Sommelier is responsible for supporting the Bar Manager/Head Bartender in creating the wine menu for all outlets and managing the wine inventory. The role involves providing personalized recommendations and ensuring a superior wine experience that complements culinary offerings, playing a crucial role in shaping guests' dining experiences. The Sommelier reports to the Bar Manager.

As a Sommelier, your responsibilities include:

  1. Providing expert wine recommendations and pairings to enhance the guest dining experience, demonstrating deep wine knowledge and personalized service.
  2. Training restaurant and bar staff on wine selections, pairing techniques, and service standards to maintain excellence.
  3. Managing wine inventory, including ordering, secure storage, rotation, and accurate POS charging to ensure availability and quality.
  4. Ensuring compliance with hotel policies, health, safety, and sanitation regulations, and maintaining a clean and organized wine cellar.
  5. Collaborating with kitchen and service teams, overseeing mise en place, and participating in pre-service briefings and closing duties.
  6. Supporting operational needs, including requisitions, stock checks, and updating wine lists and by-the-glass offerings.

We expect from you:

  • A degree or diploma in Hospitality, Business Management, or Wines and Beverages; high school qualification as a minimum.
  • At least 2 years of experience as a Sommelier or Beverage Manager in a 5-star hotel or high-end restaurant; international exposure is preferred.
  • Deep expertise in wines, including grape varieties, origins, fermentation, and tasting profiles, with the ability to educate and guide guests.
  • Proven experience managing wine inventory, orders, and par levels, with a solid understanding of POS systems and service procedures.
  • Excellent customer service and communication skills, fluent in English; additional languages are a plus.
  • Highly organized, detail-oriented, adaptable, with the physical stamina and schedule flexibility required for luxury hospitality environments.
