Job Description

Role: Ensuring the effective and efficient operations of the Stewarding Department, including cleaning processes and maintenance of health, safety, and hygiene standards in all F&B areas. Responsible for assisting the Chief Steward in maintaining HACCP Standards.

Taking ownership of all Food & Beverage back-of-house areas and common usage spaces.

Key Responsibilities
  1. Organize the store efficiently and maintain high hygiene standards.
  2. Ensure cleanliness in all storage areas, including shelves and chillers.
  3. Assist during vegetable receiving.
  4. Sanitize vegetables & fruits and transfer to vegetable storage.
  5. Arrange vegetables properly in the designated chiller, following standard procedures.
  6. Regularly monitor storage temperatures of chillers, freezers, and dry stores.
  7. Record temperature readings diligently.
  8. Communicate any temperature variations immediately to the Engineering Department and Department Head.
  9. Adhere to HACCP procedures and policies to ensure food safety.
  10. Assist in maintaining FIFO and FEFO inventory systems.
  11. Help in issuing food items to F&B outlets and kitchens based on approved requests from the Executive Chef.
  12. Report activities and any issues to the BOH Manager / Stewarding Department Head.
Qualifications
  1. Previous relevant experience in a similar role within the hospitality industry.
  2. High school diploma or equivalent; additional certifications in food safety or hospitality management are preferred.
  3. Strong understanding of food safety, hygiene standards, and HACCP principles.
  4. Knowledge of cleaning processes and proper use of cleaning equipment and chemicals.
  5. Strong communication and interpersonal skills.
  6. Physical stamina to perform tasks requiring standing, walking, and lifting throughout the shift.
  7. Ability to work efficiently in a fast-paced environment.
  8. Familiarity with inventory management and record-keeping.
