Job Description

The Role

Key Deliverables and Responsibilities

Planning & Organizing:

  1. Prepare schedules for all personnel according to the forecast and within the limits of the staffing guide, ensuring adequate manpower at all times under the guidance of the F&B Manager.
  2. Recommend hiring, promotions, and dismissals to the F&B Manager.
  3. Assist in planning promotions, beverage purchases, and pricing under the supervision of the F&B Manager.
  4. Assist in shortlisting potential new staff members for development.
  5. Participate in creating new drinks, snacks, and improving presentations to achieve objectives, proposing variations to the F&B Manager.
  6. Assist the F&B Manager in any outlined/detailed tasks.

Operations:

  1. Ensure proper maintenance and cleanliness of all outlet areas.
  2. Ensure sanitary conditions according to health codes and hotel standards.
  3. Supervise daily operations under standards fixed by hotel management and the F&B Manager.
  4. Advise and consult with the F&B Manager and Head Bartender regarding service bar matters.
  5. Supervise all bar personnel, observing attitude towards colleagues and guests.
  6. Ensure correct handling of equipment to minimize breakages and losses.
  7. Inspect all areas daily before opening according to standard checklists and ensure adherence to closing duties.
  8. Enforce and maintain all policies and procedures under the guidance of the F&B Manager.
  9. Prepare requisitions for beverages, condiments, supplies, and guest items, considering established par stocks.
  10. Report equipment failures/problems to Maintenance.
  11. Participate in training schemes as recommended by senior management.
  12. Monitor beverage cost of sale.
  13. Provide consumption data for purchasing purposes in collaboration with the Head Bartender.
  14. Maintain standards for all beverages, food, and cocktails under the guidance of the F&B Manager.
  15. Adhere to grooming standards as per hotel and outlet policy.
  16. Replace the F&B Manager in her absence, fully in charge of the bar operation.
  17. Assist in ensuring dress code and entrance procedures are followed.
  18. Ensure sound and lighting levels adhere to standards.
  19. Inspect fridges and bar stores for expiry dates.
  20. Observe opening and closing hours according to law and standards.
  21. Control beverage wastage and spoilage in collaboration with the Head Bartender.
  22. Perform other duties assigned by the F&B Manager.
  23. Conduct internal induction and training for new staff in liaison with the F&B Manager.
  24. Understand and adhere to policies related to fire, hygiene, health, and safety.
  25. Familiarize with company documentation and operational standards manual.

Administration:

  1. Assist with reports: overtime, daily logs, expenses, schedules, and vacations.

Hygiene, Safety, and Confidentiality:

  • Care for equipment and furniture.
  • Be familiar with hotel policies, layout, and emergency procedures.
  • Ensure safety regulations are followed.
  • Respect the hotel's environmental commitments.
  • Adhere to confidentiality policies regarding hotel and financial information.
