The idea candidate will lead and supervise all daily operations in the cheese factory, with a strong focus on artisanal and industrial cheesemaking. The Production Supervisor ensures milk is processed efficiently and cheese production is executed to the highest standards of quality, hygiene, and consistency.
Responsibilities
- Supervise and coordinate all activities related to milk reception, pasteurization, curd formation, molding, pressing, brining, and aging.
- Ensure optimal use of milk and ingredients for maximum cheese yield and product quality.
- Lead a team of dairy stewards and cheesemakers across multiple shifts, ensuring adherence to SOPs and hygiene protocols.
- Monitor production parameters, including pH, temperature, moisture, and fat content, to ensure consistency in cheese profiles.
- Maintain daily production logs, batch records, traceability sheets, and equipment cleaning documentation.
- Oversee the implementation of food safety programs (HACCP, ISO) and work closely with the Quality Assurance team to resolve non-conformities.
- Assist in training and upskilling staff on traditional and modern cheesemaking methods.
- Ensure preventive maintenance and sanitation schedules are followed for all equipment.
- Participate in product trials, new recipe testing, and seasonal production planning.
- Control losses, improve yield, and reduce operational downtime through proactive supervision.
Qualifications & Experience:
- Diploma or degree in Dairy Technology, Food Science, or a related discipline.
- Minimum of 3 years of hands-on experience in cheese production.
- Strong knowledge of milk processing and cheesemaking techniques, including both fresh and aged cheeses.
- Experience working with manual and semi-automated production systems.
- Hard cheese production experience is a significant advantage.
- Proven experience in team supervision and performance management.
- Solid understanding of cheesemaking science and process controls.
- Familiarity with food safety systems, audits, and regulatory compliance standards.
- Strong problem-solving skills and the ability to work effectively under pressure.
- Basic computer proficiency, including Excel and digital production tracking tools.
