As the head of the pastry team, you will be spearheading all the pastry related operations along with the following responsibilities:
- Oversee the daily operations of the pastry kitchen, ensuring consistent quality, presentation, and excellence in every product.
- Develop and implement new pastry recipes and menu items, staying current with industry trends and guest preferences.
- Manage inventory and control costs without compromising quality, ensuring that the pastry division operates efficiently and profitably.
- Ensure the highest standards of hygiene and safety are maintained in the pastry kitchen, adhering to local and international regulations.
- Foster a high-performance culture within the pastry team, providing training, mentorship, and motivation to inspire excellence and creativity.
- Collaborate with the culinary team to integrate pastry offerings into the overall dining experience, creating unique and memorable guest moments.
- Monitor guest feedback and incorporate it into the continuous improvement of the pastry offerings.
- Ensure the timely preparation and delivery of all pastry items for resort outlets, events, and special functions.
- Coordinate with the purchasing department to source high-quality ingredients and equipment for the pastry kitchen.
- Plan and execute special pastry displays and showpieces for holidays, events, and marketing purposes.
- Participate in menu engineering and pricing strategies to maximize profitability while maintaining guest satisfaction.
- Stay informed about food allergies and dietary restrictions, ensuring appropriate alternatives are available for guests with special needs.
- Contribute to the resort's marketing efforts by participating in food-related events, demonstrations, and media opportunities as needed.
Qualifications- Extensive leadership experience in a Pastry department required.
- Diploma/Certification in a Culinary discipline required.
- Working knowledge of sugar work/chocolate skills an asset.
- Computer literate in Microsoft Windows applications an asset.
- Strong interpersonal and problem-solving abilities.
- Highly responsible & reliable.
- Ability to work well under pressure in a fast-paced environment.
