Job summary

One&Only The Palm in Dubai is seeking a Pastry & Bakery Commis III to join our Pastry team, overseeing your pastry and bakery section, producing high-quality pastries, desserts, and breads while maintaining hygiene and cost controls.

You will work with the Pastry Sous Chef and Executive Pastry Chef to develop menus, train junior staff, manage mise-en-place and production schedules, and support events with consistent, creative desserts.

Qualifications

• 1-2 years of experience in pastry and bakery.
• Luxury hotel/resort/ bakery/ restaurant experience is preferred.
• Proficiency in English is required.

Responsibilities

• Assist in preparing and baking pastries, cakes, breads, desserts according to recipes and standards.
• Ensure consistency in quality, taste, texture, and presentation of pastry and bakery items.
• Support Pastry & Bakery Chef de Partie and senior chefs in daily production activities.
• Prepare mise-en-place and ensure ingredients, tools, and equipment are ready for service and production.
• Assist with seasonal pastries, specialty cakes, desserts, breads, and promotional items.
• Monitor stock levels and report shortages; ensure proper storage and FIFO rotation.
