Job Description

We are looking for an experienced Sous Chef Pastry to support the Head Baker and lead the pastry team in producing exceptional desserts, pastries, and baked creations. You will assist in developing innovative recipes, maintaining high-quality standards, and managing day-to-day pastry operations. This is a hands-on role for a creative and detail-oriented professional who thrives in a fast-paced, luxury environment.

What you’ll do

  • Support the Head Baker in overseeing all pastry production and operations.

  • Prepare high-quality desserts, pastries, breads, and specialty baked items in line with brand standards.

  • Assist in menu development, seasonal offerings, and bespoke pastry creations.

  • Ensure consistency and quality across all products through regular tastings and checks.

  • Supervise, train, and mentor junior pastry staff, fostering a culture of collaboration and excellence.

  • Maintain inventory, monitor ingredient usage, and assist with cost control.

  • Ensure compliance with hygiene, safety, and HACCP standards.

  • Collaborate with culinary and F&B teams to support events, catering, and in-house dining experiences.

  • Contribute to a creative, innovative, and inspiring bakery environment.

Qualifications

What we’re looking for

  • Culinary or Pastry degree, or equivalent professional experience.

  • Minimum 3–5 years’ experience in pastry production within luxury hotels, resorts, or high-end patisseries.

  • Strong technical skills in classic and contemporary pastry techniques.

  • Creative flair and passion for innovation in pastry and dessert presentations.

  • Leadership and team management skills, with experience training and mentoring junior staff.

  • Excellent organizational, time-management, and problem-solving abilities.
