Job summary

IHG Hotels & Resorts in Ras Al Khaimah is seeking a Head Sushi Chef to lead the sushi kitchen of our luxury resort. You will oversee menu development, quality control, and staff mentoring to deliver authentic Japanese cuisine with exceptional presentation.

Your role focuses on high-end guest experiences, strict food-safety standards, and collaborative work with the Executive Chef and F&B team to continually elevate the dining offering at our resort.

Qualifications

• Proven experience as a Head Sushi Chef in luxury hotels or premium Japanese restaurants.
• Expertise in authentic Japanese cuisine including sushi, sashimi, nigiri, maki, omakase.
• Strong leadership and team development experience.
• Excellent knowledge of HACCP and food safety regulations.
• Good English communication skills.

Responsibilities

• Lead all aspects of the sushi kitchen with exceptional quality and presentation.
• Create authentic and innovative Japanese menus with seasonal dishes.
• Manage food preparation, production, and service to luxury standards.
• Coach and develop the sushi kitchen team for excellence.
• Maintain HACCP compliance and hygiene standards.
• Control food costs, inventory, and purchasing.
• Collaborate with Executive Chef and F&B to enhance guest dining.
• Ensure equipment is properly maintained and safe.
