About The Position
Wynn Al Marjan Island is currently seeking a Chief Engineer – Kitchen & Laundry Systems to join the resort’s Executive Office team.
The Primary Duties And Responsibilities Of This Role Are
- Lead the operation and performance of kitchen mechanical systems, including ventilation, hydronics, LPG/NG gas, compressed air, CO₂/N₂ bulk beverage systems, and hot/cold water infrastructure.
- Supervise the safe commissioning of food service and laundry systems, ensuring conformity with mechanical infrastructure and compliance with authority guidelines.
- Oversee system audits for hygiene and health code compliance, and verify food area readiness for operations, inspections, or events.
- Manage gas-fed distribution networks, including leak detection, regulator calibration, and emergency shutoff interfaces in kitchen and laundry areas.
- Ensure optimized airflow and pressure control in exhaust and fresh air systems to meet performance and comfort targets while reducing energy waste.
- Monitor and maintain cold chain equipment including cold rooms, underbar fridges, and upright appliances across central kitchens and satellite areas.
- Integrate mechanical asset tracking into CAFM systems, validating planned, reactive, and condition-based maintenance schedules.
- Coordinate contingency planning for kitchen-critical systems during outages or major events, including backup equipment deployment.
- Ensure safe drainage layouts and water separation systems function properly in high-volume wet environments.
- Prepare lifecycle strategies for heavy-use kitchen equipment, ensuring optimal replacement timing and forecasting for CAPEX.
- Maintain accurate records of work orders, testing, breakdowns, and contractor activity in the CAFM system.
- Coordinate scheduling and operational needs with Culinary, Events, Stewarding, Laundry Services, Housekeeping, and Engineering.
- Schedule and oversee high-risk work such as kitchen shutdowns, ventilation duct cleaning, and cold room sanitization.
About You
The ideal candidate for this position will have the following experience and qualifications:
- Bachelor’s Degree in Mechanical Engineering, Building Services, or equivalent. A technical diploma with extensive operational experience in foodservice environments will also be considered.
- 10+ years of experience in mechanical systems with 5+ years in kitchen and laundry-specific infrastructure.
- Strong background in maintaining commercial kitchens, ventilation systems, gas-fed systems, and food safety-related mechanical services.
- Fluent in English (spoken/written); Arabic is an advantage.
- In-depth understanding of UAE codes for fire, gas, water, and hygiene.
- Familiarity with LPG storage and piping systems, ventilation regulations, and drainage compliance.
- Skilled in interpreting technical drawings, system schematics, and SOPs.
- Familiarity with CAFM/CMMS, MS Office, and asset management platforms.
