We are seeking a highly organized and experienced Kitchen Manager to oversee the daily operations of our kitchen. The ideal candidate will be responsible for managing kitchen staff, ensuring food safety standards are upheld, maintaining inventory, and ensuring the overall efficiency and profitability of kitchen operations. You will play a key role in maintaining high food quality, cleanliness, and a positive work environment.
Key Result Areas:
- Ensure consistent product quality to guarantee customer satisfaction.
- Oversee product preparation and projection to meet business levels, accurately maintaining the product control sheet to minimize wastage.
- Implement product rotation (FIFO system) and maintain stock levels through accurate ordering.
- Control food costs and usage by following proper storage procedures, standard recipes, and waste management, including monitoring food holding and refrigeration temperatures.
- Supervise employees to ensure CER and FSCC standards are maintained during shifts.
- Ensure compliance with statutory and company health, safety, and food hygiene regulations, taking corrective actions as needed.
- Resolve product quality complaints confidently, reporting serious issues to the RM or Area Coach as appropriate.
- Follow safety and security procedures to protect people, premises, stocks, and equipment.
- Identify routine problems and respond appropriately to resolve them.
- Maintain cleanliness and proper functioning of all equipment through inspections and adherence to cleaning and maintenance schedules.
- Train new and existing team members towards Star / All-Star standards to achieve proficiency.
- Manage cross-training and new product launches, ensuring standards are maintained.
- Recognize and reward team members' performance during shifts.
- Manage full shift responsibilities in the absence of GM or AGM and develop other managers to perform KM functions.
- Handle staffing decisions during shifts, including scheduling and employee check-outs.
- Provide feedback to employees and take appropriate actions.
- Adhere to the UNIT REVIEW checklist.
- Control food costs through proper ordering and receiving processes.
- Ensure FIFO practices and maintain a safe working environment via continual repair and maintenance of kitchen areas and equipment.
- Maintain high standards of cleanliness, organization, and sanitation of food products.
- Perform line checks and timeline checks as necessary.
- Prepare food daily to meet guest demands and assist with new menu implementations, including training staff and coordinating with FOH managers for food demonstrations.
- Ensure recipe adherence and monitor ticket times.
- Possess comprehensive knowledge of storekeeper duties, including case pack counts, pricing, and pars, and actively participate in inventory management, quality checks, and variance analysis to maintain food quality and cost efficiency.
Qualifications:
- Proven experience as a Kitchen Manager, Head Chef, or similar role.
- In-depth knowledge of kitchen operations, food safety, and sanitation standards.
- Strong leadership and organizational skills.
- Excellent communication and problem-solving abilities.
- Ability to work in a fast-paced environment and manage multiple priorities.
