Job description

Job Title: Butchery Section Supervisor

Under the general guidance and supervision of the Head Chef or delegate, and within the limits of established Calo policies and Procedures and the SOP Manual, you will be responsible for overseeing and directing all aspects of the operation in the Butchery Section.

Main Responsibilities
Daily Responsibilities
  • Supervise and participate in the pre-preparation of meat, poultry, and fish.
  • Ensure each section has a sufficient supply of meat, poultry, and fish.
  • Check all incoming and outgoing meat, poultry, and fish for quality and quantity; advise the Sous Chef of any discrepancies.
  • Ensure proper storage of meat, poultry, and fish according to established standards.
  • Follow portion control policies and standard packing instructions.
  • Review daily menus and guidelines to determine appropriate production load.
  • Prepare daily requisitions based on forecasted menu requirements.
  • Coordinate with other sections regarding requirements, cleanliness, wastage, and cost control.
  • Maintain a clean and orderly butchery section.
  • Ensure all equipment is correctly handled and maintained.
  • Establish and maintain effective employee relations.
  • Ensure compliance with Calo hygiene and sanitation standards.
  • Adhere to Calo Health, Safety & Hygiene policies.
  • Perform related duties and participate in special projects as assigned.
Ideal Candidate
Qualifications
  • Professional kitchen apprenticeship or chef training course.
  • Experience leading team members in a kitchen environment.
  • At least 5 years of experience in quality establishments with large-volume butchery practices.
  • Proficiency in English communication.
  • Knowledge of waste management is a plus.
Knowledge and Competency
  • Knowledge of various cooking methods, ingredients, procedures, especially butchery.
  • Familiarity with industry best practices.
  • Strong leadership and management skills.
Personality
  • Pleasant personality, capable of leading and training with empathy and patience.
