Job description

Based at the Mandarin Oriental Downtown, Dubai within the Banquet Kitchen in Dubai, the Junior Sous Chef is responsible to oversee daily kitchen operations and ensure the consistent preparation of high-quality dishes. This role requires strong leadership, organisational skills, and a deep understanding of kitchen dynamics. You will play a key role in mentoring kitchen staff, managing inventory, and maintaining the high standards. Junior Sous Chef reports to the Head Chef.

As a Junior Sous Chef, you will be responsible for the following duties:

  • Support the Banquet Chef in menu planning, recipe development, and executing refined, high-quality cuisine.
  • Oversee kitchen operations, ensuring excellence in food preparation, cooking, and presentation with strict adherence to hygiene and safety standards.
  • Manage inventory, food costs, and procurement to ensure profitability while maintaining premium quality.
  • Ensure compliance with all health and safety regulations, maintaining exceptional hygiene and cleanliness standards.
  • Lead and mentor the culinary team, promoting a culture of collaboration, creativity, and continuous improvement.
  • Collaborate with the Service team to enhance guest satisfaction, drive revenue, control costs, and incorporate culinary trends and innovations.

As a Junior Sous Chef, we expect from you:

  • Proven experience as a Junior Sous Chef or similar role in a five-star luxury hotel or fine dining setting.
  • Preferably has hotel pre-opening experience in the UAE or broader Middle East region.
  • Strong knowledge of food cost control, inventory management, and procurement to enhance profitability and efficiency.
  • Deep appreciation of culinary traditions and ingredients, with a creative and innovative approach to cuisine.
  • Effective leadership and team management skills, able to inspire and guide a diverse culinary team.
  • Excellent communication and organizational abilities, with strong attention to detail and the capacity to perform under pressure while maintaining high standards.
