Job summary

Kerzner International’s One&Only The Palm Resort in Dubai is seeking a Junior Sommelier to support the wine program, guide guests in wine selections, and ensure a memorable dining experience.

Two years of experience in a 5* hotel/resort or Michelin-star environment, excellent English, strong wine knowledge, and a team-player attitude are required. You will assist with wine service, cellar management, inventory, and staff training.

Qualifications

• Minimum of 2 years experience in upscale hotel/resort wine program.
• Experience in a Michelin-starred restaurant preferred.
• Excellent spoken and written English; additional languages a plus.

Responsibilities

• Assist in recommending and serving wines based on guest preferences.
• Present, open, and pour wine following service standards.
• Support guests in wine pairings with menu items.
• Maintain the wine cellar and manage inventory.
• Assist Head Sommelier with updating wine list.

With stunning resorts located across the globe and exciting expansion planned, Kerzner International currently has a fantastic opportunity for a Junior Sommelier to join the Food & Beverage team at One&Only The Palm Resort in Dubai.

With the global growth of our brands, you will play a key role in the Resort’s success. As a Junior Sommelier, you will support the wine program by assisting with wine service, guiding guests with selections, and ensuring a smooth and memorable dining experience. You will help maintain the wine cellar, manage inventory, and uphold our company’s core values while contributing to daily restaurant operations.

Key Duties and Responsibilities

• Assist in recommending and serving wines based on guest preferences.
• Present, open, and pour wine professionally following proper service standards.
• Support guests in pairing wine selections with menu items.
• Provide accurate information about wine regions, varietals, vintages, and flavor profiles.
• Enhance guest satisfaction by delivering warm, attentive, and knowledgeable service.
• Assist the Head Sommelier in maintaining and updating the wine list.
• Help promote premium wines, special vintages, and wine‑by‑the‑glass selections.
• Stay informed about new products, seasonal offerings, and industry trends.
• Assist in receiving, organizing, and storing wine bottles properly.
• Ensure correct labeling, rotation (FIFO), and handling of wine.
• Conduct stock‑taking and maintain accurate inventory records.
• Report low‑stock items or discrepancies promptly.
• Work closely with the service team to ensure smooth coordination between wine service and food service.
• Assist in training servers on basic wine knowledge and service etiquette.
• Support restaurant operations during peak service times as needed.
• Assist with wine‑pairing dinners, tastings, and special events.
• Participate in wine education sessions offered by suppliers or internal trainers.

Suitable candidate should have a minimum of 2-year experience in the same in an upscale 5* hotel/resort environment capacity and have worked in a Michelin star rated restaurant with strong wine knowledge. Should have excellent management and interpersonal skills and be able to build strong relationships with high profile and diverse clientele. Should be a dynamic team player and able to provide the highest standard of service to our guests. Excellent spoken and written English is required, and additional language will be highly regarded in this role.
