Role Overview
As the Inventory Coordinator, you will be responsible for managing and maintaining accurate inventory levels across both Daikan Ramen and Daikan Izakaya. This role plays a critical part in supporting daily restaurant operations by ensuring timely ordering, receiving, and proper stock distribution of all food, beverage, and operational supplies. You will collaborate closely with the kitchen, service teams, and suppliers to optimize stock flow, reduce wastage, and contribute to cost-efficiency — all while maintaining compliance with food safety and hygiene standards.
Key Responsibilities
Inventory Management & Optimization
- Monitor and maintain real-time inventory levels to meet operational demand.
- Conduct regular cycle counts, audits, and reconciliations to ensure inventory accuracy.
- Identify slow-moving, expiring, or high-usage items and adjust par levels accordingly.
- Track all stock movements between delivery, storage, and outlet consumption.
Procurement & Receiving
- Oversee daily receiving of goods, checking quality and quantity against purchase orders.
- Ensure products are properly labeled, stored (FIFO), and rotated according to standards.
- Coordinate with vendors for order schedules, urgent deliveries, or discrepancies.
System & Reporting
- Use inventory management software to log, track, and analyze inventory data.
- Prepare weekly/monthly inventory and cost reports for the operations team.
- Assist with cost control initiatives and inventory forecasting for upcoming menu changes and events.
Cross-Departmental Coordination
- Liaise with kitchen, bar, and service teams to forecast needs and adjust orders accordingly.
- Collaborate with finance for invoice matching and purchasing records.
- Work with operations to prepare for internal or external audits.
Compliance & Storage Standards
- Ensure compliance with food safety, hygiene, and safety standards within all storage areas.
- Maintain clear documentation for traceability and supplier compliance.
- Organize stockrooms for efficient access and hygiene.
Requirements
- Proven experience as an Inventory Coordinator or in a similar role, preferably in hospitality or high-volume restaurants.
- Strong analytical and organizational skills, with attention to detail.
- Experience with inventory software (e.g., MarketMan, Oracle, SAP, or similar).
- Strong communication and collaboration skills across departments.
- Proficiency in Microsoft Excel and inventory reporting.
- Diploma or Bachelor's in Supply Chain, Logistics, Business Administration, or related field preferred.
- Knowledge of Japanese ingredients and supply logistics is a plus.
