A leading hotel in Dubai seeks a Food Safety Manager responsible for overseeing compliance with food safety standards. The role involves conducting audits, managing training, and ensuring hygiene practices are upheld within the kitchen. Ideal candidates will possess a relevant degree and extensive experience in safety management, particularly in hospitality.
Responsible for managing the entire Food Safety Management System (FSMS) in the hotel, ensuring compliance with local and IHG food safety standards throughout the year.
Handles administrative tasks and maintains updated records on hygiene matters such as:
Controls stock levels and liaises with the Purchasing Manager and suppliers for food safety-related procurement.
Conducts inventories with the accounting team and manages food safety functions to optimize departmental costs.
Keeps abreast of trends, systems, and practices in Food Safety Management through trade literature, trade shows, and site visits.
Performs kitchen inspections focusing on personal, environmental, and food hygiene, with corrective action plans and record-keeping.
Monitors daily cleaning and hygiene standards in collaboration with kitchen managers and stewarding staff.
Works with the training manager to conduct food handler training sessions.
Oversees preparation and maintenance of kitchen equipment and performs microbiological analyses of food and beverages, including swab testing and aerial counts.
Ensures all stored food items are covered, dated, and labeled, and inspects food transport and holding equipment.
Conducts spot checks on received food items for temperature abuse and coordinates microbial tests for new products or suspected foodborne illnesses.
Maintains documentation of hygiene and food safety standards, liaises with pest control, and reviews pest management performance.
Conducts hygiene audits of kitchen staff, maintains records, and inspects vendors in coordination with the purchasing department.
Implements improvements to hygiene standards and manages occupational health and safety for colleagues.
Bachelor’s degree in Hospitality, Safety Management, Business, or related field.
At least 4 years of management, safety/security, or compliance experience, preferably in hospitality or customer-facing sectors.
Strong knowledge of health and safety laws, risk assessment, and regulatory compliance.
Excellent communication, analytical, and problem-solving skills, with the ability to lead under pressure.
