Qualifications

• Strong diagnostic ability for refrigeration systems, gas-fired appliances and electrical control systems.
• Able to read and interpret technical manuals, wiring diagrams, refrigeration schematics and PLC/IoT logic.
• Proficient with diagnostic tools such as listed equipment.
• Knowledge of refrigeration theory and refrigerant handling.
• Good mechanical aptitude for pumps, valves, bearings and drive systems.
• Familiar with HACCP and safety procedures.
• Strong prioritization, communication and coordination with chefs and F&B.
• Able to work nights and weekends when kitchens operate.

Responsibilities

• Maintain, troubleshoot, repair, install and commission all kitchen & beverage equipment to ensure continuous, safe operation.
• Conduct scheduled preventive maintenance and inspections; document outcomes and follow up on repairs.
• Respond to kitchen breakdowns and emergency service calls to avoid service disruption.
• Calibrate and verify temperature controls and sensors to meet HACCP and food safety requirements.
• Maintain maintenance records and inventory.
• Procure spare parts and coordinate with vendors; handle warranty claims.
• Coordinate with Kitchen, Stewarding, F&B and Engineering to schedule PPM and shutdowns.
• Monitor energy and water consumption; implement energy-saving improvements.
• Ensure compliance with food safety, gas, electrical, and fire safety regulations.
• Maintain a clean, safe work area and tools; follow safety policies.
• Assist during peak events and banquets to ensure kitchen operation.
• Participate in equipment commissioning and vendor coordination.
• Support energy-conservation and sustainability initiatives for kitchen operations.
• Keep technical skills current through training and briefings.
• Cross-train with Engineering on MEP topics as needed.
