Job summary

IHG Hotels & Resorts is seeking a Head Sushi Chef at InterContinental Ras Al Khaimah Mina Al Arab Resort & Spa to lead the culinary vision of our Japanese dining experience, delivering authentic sushi and sashimi with craftsmanship.

You will oversee the sushi kitchen, mentor the team, ensure HACCP and luxury hospitality standards, and collaborate with the Executive Chef and F&B to create seasonal signature dishes.

Qualifications

• Proven Head Sushi Chef experience in luxury hotel or premium Japanese restaurant.
• Expertise in authentic Japanese cuisine (sushi, sashimi, nigiri, maki, omakase).
• Strong leadership and team development experience.
• Excellent HACCP and food safety knowledge.
• Good English communication skills.
• Culinary qualification or relevant certification preferred.

Responsibilities

• Lead all aspects of the sushi kitchen, ensuring quality and presentation.
• Create authentic and innovative Japanese menus with seasonal dishes.
• Manage food preparation, production, and service to luxury standards.
• Coach and develop the sushi kitchen team for excellence.
• Maintain HACCP, hygiene and sanitation compliance.
• Control food costs, inventory, purchasing, and waste.
• Collaborate with Executive Chef and F&B to develop concepts.
• Ensure kitchen equipment is maintained and safe.
• Monitor guest feedback and continuously improve menus.
• Promote a positive, high-performing kitchen culture.
