Responsibilities
  • Lead and manage the sushi kitchen team, ensuring precision, consistency, and elevated presentation standards
  • Prepare and execute a variety of sushi, sashimi, and maki with exceptional attention to detail and product quality
  • Curate and maintain a sushi menu that complements Bâolis Asian-French fusion concept and luxury positioning
  • Ensure strict adherence to HACCP, food hygiene, and safety regulations at all times
  • Oversee inventory control, ordering of premium ingredients, and minimize waste while maintaining food cost targets
  • Train, supervise, and mentor junior sushi chefs and kitchen staff to ensure high performance and brand consistency
  • Collaborate with the Executive Chef to execute seasonal menu changes and chefs specials
  • Maintain a clean, organized, and efficient sushi counter and prep area, even during peak service
  • Monitor guest feedback and uphold the Bâoli standard of theatrical, guest-focused service
  • Stay up to date with global sushi trends, techniques, and presentation to keep the offering fresh and innovative
