Job description

Based at the Mandarin Oriental Jumeira, Dubai within the Casa Amor Team, the Head Chef is responsible for all related operational, administrative and financial aspects for the culinary operation of the restaurant.

As Head Chef, you will be responsible for the following duties:

  • Understand and communicate all corporate and hotel policies and standard operating procedures to the colleagues.
  • Ensure all business activities and decisions comply with the general law, and with all rules, regulations and other requirements.
  • Support all aspects of the Mandarin Oriental Jumeira, Dubai Human Resources Strategic Policy.
  • Support all learning and development activities.
  • Update and maintain a complete Training Matrix for your department.
  • Update and maintain Job Description and Job Specification Matrix for your department.
  • Prioritize and document colleagues' career paths and development needs in accordance with the MO Profile online system.
  • Hold monthly meetings with all colleagues to assure they have a forum to voice concerns and share departmental and hotel information.
  • Safeguard stored information and not divulge any personal data concerning guests, customers or colleagues without appropriate authority.
  • Adhere to all policies & procedures relating to Safe, Sound and Sustainable at Mandarin Oriental.
  • Ensure compliance with the MOHG Social Media Policy regarding content published on any social media platform.
  • Maintain a zero tolerance on all forms of harassment or discrimination.
  • Act as a hotel ambassador at all times.
  • Carry out any additional duties requested by management related to hotel operational activities.
  • Follow the principle of the 5Ps: Proper Planning Prevents Poor Performance at all times.
  • Oversee all operational and administrative culinary aspects of the restaurant and prioritize engagement based on business volumes.
  • Create and maintain synergy between the restaurant and Main Production Kitchen to assure maximum efficiency.
  • Work closely with the respective restaurant manager and executive sous chef to plan menus, prices and promotional events.
  • Regularly review menus regarding popularity of dishes, food cost, and seasonality, and suggest new menu proposals to the Executive Chef.
  • Ensure plating guides are up to date and followed according to set dish descriptions, cooking methods, and presentation images.
  • Ensure that all restaurant cuisines are prepared authentically as standards set by the Executive Chef.
  • Support the Restaurant Manager in overseeing all IG point of sales related setups and regularly check the accuracy of all items.
  • Identify areas for improvement in food and beverage quality by reviewing various quality audit reports.

As Head Chef, we expect from you:

  • Experience in the Dubai market.
  • Experience in Mediterranean cuisine.
  • Standalone experience in a fast-paced environment (hotel experience not mandatory but preferred).
