Position Summary

As the Executive Sous Chef for dnata Catering, you will assist the Executive Chef in overseeing culinary operations and ensuring the delivery of exceptional food experiences to airline passengers. You will lead and manage a team of chefs, cooks, and kitchen staff in preparing, cooking, and presenting high-quality meals. Collaboration with the culinary team will be essential in developing innovative menus that cater to diverse dietary requirements and passenger preferences.

You Will
  • Maintain high standards of food quality, safety, and hygiene, complying with industry regulations.
  • Support menu planning, recipe development, and culinary techniques to create memorable airline dining experiences.
  • Oversee inventory, supplier relationships, and budgeting to ensure smooth operations and profitability.
  • Develop and implement Standard Operating Procedures to enhance productivity and control costs.
  • Ensure compliance with food ready times and order quantities.
  • Facilitate effective communication through shift meetings and discussions.
  • Research new food formulas and processing procedures in collaboration with R&D.
  • Test food modalities and quality to ensure excellence.
  • Work with Purchasing to source and ensure availability of materials.
  • Ensure requisition orders are fulfilled by receiving.
  • Standardize food hygiene practices.
  • Assist in project timelines and launching new concepts with Operations.
  • Train and coach staff to improve skills and efficiency.

This salary range is influenced by experience, qualifications, and other factors as part of the overall compensation package.

You Have
  • Expert culinary skills with experience in Michelin-starred or reputable institutions.
  • Knowledge of global ingredients and menu creation.
  • Proven ability to craft exquisite culinary art focusing on taste, presentation, and creativity.
  • At least five (5) years of high-volume food production and airline catering experience.
  • Excellent interpersonal and communication skills.
  • International cuisine expertise.
  • Experience with process improvements and lean principles.
  • Proficiency in Microsoft Office.
  • Valid food handler's certificate or equivalent.
  • Multilingual abilities are a plus.
Additional Considerations

Ensure threats, knives, and breaches are handled promptly and investigated for root causes and corrective actions.

Perform multi-tasking under time constraints, with attention to detail and accuracy. Maintain punctuality and follow instructions diligently.

Physical and Work Environment

Regularly required to stand, walk, reach, and lift up to 30 pounds. Work indoors with noise levels ranging from minimal to loud. Follow safety procedures and report unsafe conditions.
