Job Description

The Executive Oriental Chef is responsible for leading the culinary operations of the oriental cuisine section, ensuring the preparation and presentation of high-quality dishes that reflect authentic flavors and creativity. This role oversees the kitchen team, manages food production, and ensures compliance with hygiene standards, particularly in a high-end hospitality or fine dining environment in the UAE. The ideal candidate will bring deep expertise in oriental culinary traditions and strong leadership skills.

Responsibilities:

  • Overseeing all kitchen operations related to oriental cuisine, including menu development, food preparation, and presentation.
  • Leading, training, and mentoring a team of chefs and kitchen staff to maintain consistency and excellence in culinary execution.
  • Creating innovative dishes while preserving the authenticity of traditional oriental flavors.
  • Monitoring food cost, portion control, and inventory to optimize kitchen efficiency and minimize waste.
  • Ensuring strict compliance with food safety, hygiene, and sanitation regulations as per UAE municipality standards.
  • Collaborating with procurement to source high-quality ingredients and maintain supplier relationships.
  • Planning and coordinating special culinary events, theme nights, or promotional menus.
  • Conducting regular kitchen inspections and implementing quality assurance practices.

Requirements:

  • Degree or diploma in Culinary Arts, Hotel Management, or a related field.
  • Minimum of 8-10 years of experience in oriental cuisine, with at least 3 years in a leadership role in a fine dining or luxury hotel environment.
  • Deep knowledge of Middle Eastern, Asian, and fusion oriental cuisines.
  • Strong leadership and team management abilities with excellent communication skills.
  • Creative flair and the ability to innovate while respecting culinary traditions.
  • Proficiency in kitchen management software and understanding of food costing.
  • Familiarity with UAE food handling and safety regulations.
  • Flexibility to work in shifts, including weekends and holidays.
