Key Responsibilities

As an Executive Chef for dnata Catering, you will oversee culinary operations and ensure exceptional food experiences for airline passengers. Your primary duties include leading and managing chefs, cooks, and kitchen staff in preparing, cooking, and presenting high-quality meals. You will collaborate with the culinary team to develop innovative menus catering to diverse dietary needs, maintaining high standards of food quality, safety, and hygiene. Responsibilities also include menu planning, recipe development, inventory management, supplier relations, budgeting, and ensuring operational efficiency and profitability. Your leadership, creativity, and passion for culinary excellence will contribute significantly to dnata Catering's success.

dnata is one of the world’s largest air services providers, established in 1959, operating in 127 airports across 35 countries. We offer ground handling, cargo, travel, and flight catering services, serving over 300 airline customers daily, handling over 1,900 flights, and managing extensive cargo, hotel bookings, and meal uplift operations.

You Will
  • Develop Standard Operating Procedures
  • Increase productivity and control labor costs
  • Manage production to exact order quantities
  • Coordinate internal supply chain activities
  • Ensure food ready times (FRT) and order accuracy
  • Conduct communication and meetings within departments
  • Research formulas, processing procedures, and food layout based on R&D directives
  • Test and validate food modalities
  • Collaborate with Purchasing to source materials
  • Ensure receiving department fulfills requisitions
  • Standardize food preservation and hygiene practices
  • Work with Operations on new concept launches
  • Train and coach staff for task handling

Nonessential functions:

  • Other duties as assigned

This salary range is influenced by experience and qualifications, typically between $100k - $140k.

You Have
  • Bachelor’s Degree preferred; or Associate degree with 10+ years of culinary leadership experience
  • Expert culinary skills and international cuisine knowledge
  • Experience in Michelin-starred restaurants or reputable institutions
  • Knowledge of global raw materials and menu creation
  • Ability to create culinary art with taste, creativity, and plating
  • Client interaction skills
  • At least 5 years in high-volume food production and airline catering
  • Excellent interpersonal skills
  • Experience with MEDINA Quality Food Assurance kitchens
  • Proficiency in Microsoft Office
  • Valid food handler’s certificate or equivalent

Additional Demands

Requires multitasking, attention to detail, punctuality, following instructions, and productivity standards. Physical ability to stand, walk, lift up to 30 pounds, and work in variable noise levels indoors.
