About the job

Based at the Mandarin Oriental Downtown, Dubai within the Food & Beverage Department in Dubai, the Chef de Partie will play a vital role in our culinary team, specializing in the preparation and presentation of high-quality dishes that reflect the authenticity of Greek cuisine. Chef de Partie will oversee the smooth operation of your designated kitchen section, ensuring consistency in food quality, flavor, and presentation. The Chef de Partie reports to Sous Chef.

As a Chef de Partie, you will be responsible for the following duties:

  • Take full ownership of food quality, presentation, and timely delivery in your kitchen section, while supporting other culinary areas as needed.
  • Supervise your designated section and ensure smooth cooperation with other sections in the kitchen.
  • Maintain strict compliance with food quality standards, hygiene, and stock management protocols.
  • Follow and update plating guides to ensure consistency in dish presentation and authenticity in preparation.
  • Manage daily ordering of ingredients to ensure smooth kitchen operations and inventory control.
  • Uphold and comply with all health, food safety, and hygiene standards in line with hotel policies, HACCP requirements, including those mandated by UAE Municipality.

As a Chef de Partie, we expect from you:

  • High School qualification required; a Degree or Higher National Diploma in Hospitality or Culinary Arts is preferred.
  • Minimum of 3 years experience in a 5-star hotel or upscale restaurant environment.
  • Proven experience as a Chef de Partie in high-volume, fine-dining operations.
  • International exposure in at least two regions (Asia, Europe, North America, preferably Middle East) is advantageous.
  • Strong culinary skills with solid knowledge in dish preparation, cooking techniques, and presentation.
  • Familiarity with HACCP standards and experience in hotel pre-opening or renovation projects is preferred.
