Join La Squadra: RESTAURANT MANAGER @ Dubai (New Opening)

With Big Mamma's rapid expansion, we are taking an exciting step beyond Europe for the first time - landing in Dubai! We are looking for a passionate and driven Restaurant Manager to join La Squadra and lead the launch of our new trattoria in the heart of the city.

You will embody our core values of excellence, meritocracy, entrepreneurship, and authenticity in your daily work. Reporting to the General Manager, your main responsibilities will include:

Main Responsibilities:
  1. Service Quality: Guarantee excellence, consistency, and speed of service in line with Big Mamma's standards.
  2. Guest Experience: Supervise a warm and attentive welcome for all guests.
  3. Restaurant Performance: Optimize table turnover and ensure the average spend meets targets.
  4. Operational Flow: Ensure smooth daily operations on the floor.
  5. Hygiene: Maintain high cleanliness standards in the dining area.
  6. Cost Control: Identify ways to optimize labor costs related to front-of-house operations.
  7. Team Scheduling: Manage team rosters and shift planning.
  8. Stock Management: Oversee inventory and orders for wine, dishware, and uniforms.
  9. Cash Handling: Be responsible for the cash register.
  10. Equipment Maintenance: Ensure proper upkeep of all front-of-house equipment.
  11. Team Success:
    • Recruitment: Approve new hires and oversee onboarding.
    • Training: Lead daily training sessions and share the Big Mamma vision.
    • Team Cohesion: Foster a positive and inclusive work environment.
    • Cross-Team Collaboration: Encourage coordination between kitchen, bar, and front-of-house teams.
    • Partnership with Assistant Manager: Collaborate weekly to ensure smooth service.
