About the job

Based at the Mandarin Oriental Downtown, Dubai within the Pastry section in Dubai, the Demi Chef de Partie is responsible to carry out and contribute to delivering exceptional and innovative desserts that elevate the guest experience. Demi Chef de Partie reports to Chef de Partie.

As a Demi Chef de Partie, you will be responsible for the following duties:

  • Assist the Chef de Partie in the preparation of high-quality pastries while following recipes and production methods with accuracy, ensuring consistency in taste and texture.
  • Monitor inventory levels, maintain proper stock rotation, and manage mise en place for the pastry section.
  • Contribute to the development of new pastry items, bringing creativity and inspiration to the team.
  • Support other kitchen operations and collaborate across sections when required.
  • Uphold and comply with all health, food safety, and hygiene standards in line with hotel policies, HACCP requirements, including those mandated by UAE Municipality.

As a Demi Chef de Partie, we expect from you:

  • High school diploma or equivalent; formal culinary training is an advantage.
  • Minimum of 2 years experience as Demi Chef de Partie in a pastry section of a 5-star hotel or upscale restaurant.
  • Hands-on experience in dough preparation, proofing, baking, and finishing techniques.
  • Strong understanding of HACCP and food safety practices.
  • Effective communication skills in English (verbal & written); knowledge of additional languages is a plus.
  • Previous experience in hotel pre-opening or renovation projects is highly desirable.
  • Passion for pastry arts, a creative flair, and a collaborative, team-first attitude.
