Job description

Based at the Mandarin Oriental Downtown, Dubai, within the Food & Beverage department in Dubai, the Head Bartender will supervise the bar, preparing an outstanding selection of creative beverages. Extensive wine knowledge is essential, as the role includes curating and advising on our wine offerings. Supporting servers as needed and working under the guidance of the respective managers, the Head Bartender will also lead a team of skilled Bartenders, ensuring every drink meets our highest standards of quality and presentation. Head Bartender reports to the Assistant Manager.


As a Head Bartender, you will be responsible for the following duties:

  • Understand and verbally explain the outlet s concept and food and beverage offerings to guests, and recommend suitable drinks when necessary.
  • Monitor daily bar counter setup, ensuring mise en place and required ingredients and equipment are prepared for efficient service, and provide all beverages, such as wines or juices, are fresh and in good order.
  • Create new mixed drinks and cocktails for promotional activities and new menus, and train Bartenders to offer and serve cigars as per standards.
  • Handle customer complaints effectively, both verbal and written, and report them to managers without fail.
  • Carry out monthly inventories to ensure correct amounts are stocked, avoid running out of stock during service periods, and perform cashiering duties if requested.
  • Ensure customer satisfaction from arrival to departure, create WOW moments to surprise and delight guests, and perform any other reasonable tasks assigned by the Restaurant/Outlet manager.

As a Head Bartender, we expect from you:

  • High school qualification required; a degree or diploma in Hospitality, Hotel, or Business Management is preferred.
  • Minimum 2 years as Head Bartender in a luxury hotel or resort, with 3 years in high-end bar service preferred.
  • Basic computer proficiency (including MS Office) and familiarity with restaurant POS and cashiering systems are preferred.
  • Strong expertise in mixology, including cocktails, non-alcoholic beverages, spirits, and beers, along with drink presentation and product knowledge. Extensive wine knowledge is essential.
  • Solid understanding of bar service procedures, with additional knowledge of cigars and luxury beverage experiences.
  • Fluent in English; additional languages like Arabic are a plus. Strong interpersonal skills, organizational ability, and flexibility to work varied shifts are essential.
