About the role
The Saikind Sous Chef holds a junior management position within the kitchen department, reporting to the Saikind Restaurant Chef.
What you will do
- Hire, train, motivate, supervise, and discipline all Chefs working directly and indirectly in the Saikind kitchen.
- Schedule employees' shifts and complete performance evaluations for supervisors and line staff.
- Communicate regularly with the Saikind Restaurant Chef to foster excellent rapport throughout the food production department and in developing new menu items, ensuring the quality of all food prepared.
- Inspect taste, temperature, and visual appeal of dishes, ensuring uniformity and adherence to portion sizes.
- Requisition all items needed for the following day from the food storeroom, non-food storeroom, and stewarding department.
- Ensure proper sanitation procedures are followed, and kitchens (main kitchen, apre spa, library bar, and seasons tea lounge) are always clean and tidy.
- Maintain all equipment in full working order.
- Ensure high standards in the production of international dishes and other cuisines.
- Supply all prepared products on a timely basis.
- Prepare appealing room amenities when needed.
- Establish and ensure compliance with standard recipes.
- Respond appropriately to hotel emergencies or safety situations.
- Perform other tasks or projects as assigned by hotel management, including packaging design, procurement, marketing, and merchandising of food products in collaboration with the Executive Chef and Assistant Director of Food & Beverage.
- Fully understand and adhere to Four Seasons Food Standards.
- Obtain and implement Food Service Sanitation certification protocols, if available.
- Work closely with all chefs concerning the food prepared in your kitchens.
- Collaborate with the culinary/F&B team to ensure smooth operations.
- Comply with Four Seasons Work Rules and Standards of Conduct as outlined in EmPact.
- Work harmoniously and professionally with co-workers and supervisors.
- Perform other tasks or projects as assigned by the Saikind Restaurant Chef and Assistant Director of Food & Beverage.
What you bring
- 2 to 3 years of experience in a similar position within a luxury brand.
- Strong leadership and team management skills.
- Proficiency in a wide range of cooking techniques and kitchen operations.
- High knowledge of food safety, hygiene, and inventory control.
- Excellent time management and communication skills.
- Outgoing personality with a proactive approach to tasks.
