Job summary

Mandarin Oriental Downtown, Dubai is seeking a Demi Chef de Partie for the Chitarra (Italian) team. Based at our luxury hotel, you will craft classic and contemporary Italian dishes, upholding the highest standards and delivering an exceptional dining experience.

The ideal candidate has a minimum of 2 years’ experience in a 5-star setting or reputable Italian restaurant, strong Italian technique, HACCP knowledge, and good English; formal culinary training is a plus.

Qualifications

• Strong foundation in Italian culinary techniques and ingredient handling.
• Knowledge of HACCP and food safety practices.
• Effective English communication (verbal & written).
• Minimum 2 years’ experience as a Demi Chef de Partie or similar in a 5-star hotel or Italian restaurant.

Responsibilities

• Assist the Chef de Partie in preparing Italian dishes, including pasta and antipasti, following recipes and standards.
• Maintain a clean, safe, and organized kitchen environment.
• Work under pressure with consistency and attention to detail.
• Monitor inventory levels and assist with orders for your section.
• Provide cross-functional support across kitchen operations.
• Uphold HACCP and UAE health and hygiene standards.
