OUR EXPECTATIONS FROM THE ROLE:

  • Proper setup and timely preparation of station for each service, including mis en place.
  • Monitor stock levels and manage ordering for your section.
  • Participate actively in departmental communication.
  • Prepare food according to recipes and standards set by the Sous Chef or Chef de Cuisine.
  • Report any food quality issues promptly.
  • Maintain knowledge of dishes and communicate with team members.
  • Flexibility to work in other areas and participate in cross-training.
  • Mentor junior chefs and apprentices, transmitting culinary skills and recipes.
  • Implement new menus, dishes, and regulations as directed by supervisors.
  • Minimize overproduction and waste to control costs.
  • Report maintenance issues and equipment malfunctions immediately.
  • Assume responsibilities of the Chef de Partie when absent.
  • Follow environmental policies, food safety, and sanitation standards.
  • Proper storage, FIFO, temperature control, and labeling of food items.
  • Ensure compliance with all standards and procedures.
  • Maintain personal grooming and hygiene standards.
  • Clean and sanitize work areas regularly.
  • Overtime may be required and will be approved by supervisors.
  • Adhere to all rules; violations may lead to disciplinary action.

POSITION SUMMARY

Prepare special meals and substitutions, regulate oven and grill temperatures, ensure proper portioning and garnishing, maintain food logs, and monitor food quality. Communicate needs during busy periods, inform staff of specials and stock issues, and prepare/cook food according to standards. Prepare cold foods as needed.
