About the job

Based at the Mandarin Oriental Jumeira, Dubai, within the Noor Lounge Pastry Kitchen, the Demi Chef de Partie Pastry will carry out and partially supervise operational tasks and duties in the kitchen under the guidance of the Senior Chefs. The overall objective is to prepare food in a timely manner, adhering to quality and food safety standards.

Responsibilities

  • Assist the Chef de Partie in daily duties and oversee responsibilities during absence.
  • Wash and peel ingredients for dish preparation.
  • Prepare mise en place to the highest quality standards.
  • Follow plating guides according to dish descriptions, cooking methods, and presentation images.
  • Set up and replenish buffets as required.
  • Organize requisitions and store ingredients properly, ensuring timely pickup.
  • Check inventory of ingredients before each shift to ensure adequate stock levels.
  • Store ingredients in labeled, preserved containers.
  • Maintain cleanliness and sanitation of work surfaces, tools, and utensils before and after use, following food safety standards.
  • Adhere to personal hygiene standards at all times.
  • Support cleanliness and maintenance of kitchens and stewarding areas; assist supervisors with daily checks.
  • Follow food safety standards set by Mandarin Oriental Hotel and comply with UAE regulations.
  • Ensure customer satisfaction in line with MOHG's Quality Experiences, Pillars, and service standards.
  • Work collaboratively with team members and assist colleagues as needed.
  • Support other outlets and banquet services if requested.
  • Attend all scheduled meetings and training sessions.
  • Perform additional duties as assigned by superiors.
  • Possess solid experience in food preparation and cooking.
  • Have basic knowledge of chocolate confections such as truffles, bonbons, and chocolate-covered fruits.
  • Assist with stock ordering and quality checks upon receipt.
  • Work long hours with a focus on operational excellence.
  • Lift and move objects weighing up to 15 kg without assistance.
  • Support management in motivating and leading a diverse team.
  • Know the use of kitchen tools and utensils for specific tasks.
  • Handle multiple tasks effectively.
  • Maintain knowledge of food hygiene standards.

Candidate Requirements

  • High School qualification or equivalent.
  • Degree or Higher National Diploma in Hospitality/Culinary Arts preferred.
  • Experience as a Demi Chef de Partie in a high-volume hotel or restaurant with high service standards.
  • Minimum of 2 years of culinary experience in a 5-star hotel or restaurant.
