Job summary

Four Seasons Hotel DIFC in Dubai seeks a skilled Japanese kitchen professional to assist in Kaiseki and Sushi sections. You will help with mise en place, plating, and ensuring hygiene standards within a luxury hotel kitchen.

Qualifications

• 2–3 years of kitchen experience in Japanese cuisine.
• Basic knowledge of Kaiseki or Sushi preparation.
• Willingness to learn and flexibility to work in both sections.
• Strong knife skills and attention to detail.
• Understanding of food safety and hygiene standards.
• Maintain a clean, professional appearance and grooming standards.

Responsibilities

• Assist in the preparation and presentation of dishes in Kaiseki and Sushi sections
• Flexibly support either section based on business needs and shift assignments
• Ensure proper mise en place and proper service during operations
• Maintain cleanliness, organization, and hygiene of the assigned kitchen area
• Follow recipes, portion control, and plating standards
• Practice safe food handling and comply with HACCP guidelines
• Communicate effectively with team members to ensure smooth coordination
• Monitor ingredient stock levels and report shortages to senior CDP
• Continuously learn and adapt to different techniques used in Kaiseki and Sushi cuisine
• Participate in daily briefings and training sessions
