OUR EXPECTATIONS FROM THE ROLE:

  • Properly set up station for each service period, ensuring all mise en place is ready on time.
  • Monitor stock levels and be responsible for ordering within your section.
  • Communicate actively within the department.
  • Prepare food according to recipes designated by the Sous Chef / Chef de Cuisine.
  • Report any changes in food quality during preparation.
  • Maintain knowledge of products and dishes, and communicate this to team members.
  • Be flexible to work in other areas and participate in cross-training as needed.
  • Contribute to training junior chefs and apprentices.
  • Implement new menus, dishes, and regulations under the guidance of the Chef de Cuisine / Sous Chef.
  • Minimize overproduction and food waste to reduce costs.
  • Report maintenance issues and food quality concerns immediately.
  • Take over responsibilities of the Chef de Partie in their absence.
  • Adhere to environmental policies, food safety, and sanitation standards.
  • Proper storage, FIFO, temperature control, and labeling of food items.
  • Ensure proper receiving, decoration, and presentation of food.
  • Follow personal grooming standards and maintain cleanliness.
  • Overtime may be required based on business needs, authorized by management.

POSITION SUMMARY

Prepare special meals or substitute items, regulate oven and equipment temperatures, ensure proper portioning and garnishing, maintain logs, and monitor food quality. Communicate with team during busy periods, inform staff of specials and stock status, and prepare and cook food according to standards. Also responsible for cold foods preparation.
