About The Job

Based at the Mandarin Oriental Downtown, Dubai within the Food & Beverage Kitchen, Greek Restaurant section in Dubai, the Demi Chef de Partie will assist in preparing authentic and modern Greek dishes and/or Mediterranean cuisine at the highest level of service, ensuring every plate reflects the vibrant flavours and traditions of Greece. Demi Chef de Partie reports to Chef de Partie.

As a Demi Chef de Partie, you will be responsible for the following duties:

• Assist the Chef de Partie in preparing and cooking traditional and contemporary Greek dishes with precision and flair while ensuring all ingredients are prepared, stored, and presented according to recipes and kitchen standards.
• Maintain a clean, organized, and safe workstation at all times.
• Work efficiently under pressure, delivering consistent quality and attention to detail.
• Monitor inventory levels and assist with stock requisitions and control.
• Work collaboratively with the wider kitchen team and assist across sections as needed.
• Uphold and comply with all health, food safety, and hygiene standards in line with hotel policies, HACCP requirements, including those mandated by UAE Municipality.

As a Demi Chef de Partie, we expect from you:

• High school diploma or equivalent; formal culinary training is an advantage.
• Minimum of 2 years experience as a Demi Chef de Partie or similar role in a 5-star hotel or standalone restaurant, with strong exposure to Greek or Mediterranean cuisine.
• Solid knowledge of Greek cooking techniques and ingredients, including meze, grilled meats, seafood, and pastries.
• Effective communication skills in English (verbal & written); knowledge of additional languages is a plus.
• Proven understanding of HACCP and food safety practices.
• Previous experience in a hotel pre-opening or renovation project is preferred.
• Passion for culinary arts, strong teamwork skills, and a commitment to excellence.
