OUR EXPECTATIONS FROM THE ROLE:

  • Properly set up station and ensure mis en place is ready on time for each service.
  • Monitor stock levels and manage inventory orders for your section.
  • Communicate actively within the department.
  • Prepare food according to recipes provided by the Sous Chef / Chef de Cuisine.
  • Report any issues with food quality to the relevant supervisor.
  • Maintain knowledge of products and dishes, and communicate effectively with team members.
  • Assist in other areas as needed and participate in cross-training.
  • Mentor junior chefs and apprentices by sharing culinary skills and recipes.
  • Implement new menus, dishes, and regulations as directed by supervisors.
  • Minimize overproduction and food waste to control costs.
  • Report maintenance issues and equipment malfunctions immediately.
  • Take over responsibilities of the Chef de Partie in their absence.
  • Follow environmental policies and food safety standards.
  • Ensure proper food storage, FIFO practices, and temperature controls.
  • Label and date food items accurately.
  • Maintain hygiene and sanitation standards.
  • Adhere to personal grooming and uniform standards.
  • Participate in cleaning and sanitation of the kitchen.
  • Overtime may be required and must be approved by management.
  • Any violations of rules will be subject to disciplinary action.

POSITION SUMMARY

Prepare special meals or substitutions, regulate oven and grill temperatures, ensure proper portioning and presentation, maintain food logs, monitor food quality, communicate during busy periods, and assist with menu and stock management. Prepare cold foods and ensure all food safety standards are met.
